Thanks for the pointer on that!

However, I still do not see a way to easily edit the description once a file is already inserted.

As I wrote already: simply go to "Files" -> click on the file in question -> punch in the desc -> hit save

Ok, I was not following your previous answer. I was trying to change the description from within the Item Edit screen. Sorry!!

Can these descriptions be changed from the front-end of the site as easily?

Dont know, never tried, but highly unlikely.
