Changing one category filter affects all categories

Greetings,
a project I'm working on has the alphabet filter in one category. (a restaurant index)
The problem I am having is if a visitor filters this category to show all items with the letter M (as an example) then when the user switches to an other categories (recipes) it only shows the entries with M, with no way to switching to view all. Even worse if the user selects X on the restaurant view most other categories will just show "No items available for this category"
And a user won't know why or bother to figure out why this is happening.
How can I make sure a filter like this is only applied to the specific category it was intended for?

the work around is the cache "turn it off"
