The read-more output exists in all other category layouts
in the case of table layout (default) there is no "read-more" column
thus the setting has no effect ...

of course you could duplicate the default layout
as
'somename' layout
and then add such a column
(or add it under the title of every item)
but anyway the title is really what usually acts as the read more, in the case of table display
