For example ALL the scopes that the module FC has,

for example the module is not LIMITED to one category we can say in the module to scope by the select categories, that is very nice featured but is not possible via menu.

The same applies to TAGS, DATE RANGE, etc

About your question, this has crossed our mind before,
most notably 2 things:

1. Actually due to some changes in category model in v1.5.6 it maybe possible with a medium amount of work to create a Joomla menu item to multiple categories

2. There is a thought to convert universal module to a new view called "universal"

This Universal VIEW could have all the features of the module then this is a major change in how to create the categories this would definitely come handy many many times.

Yes but it will complement the category view as it will have different options, the category menu item will still be needed and combined with some extra menu parameters e.g. like predefined filter values
