Possible scenarios:
1. Mass adjustment of fields
2. Backend for bots

For example, I have 1,000 categories and 10,000 entries. In each entry, categories in text form. How to import all categories and entries quickly and easily into FlexiContent?

you already have native import with csv but (limited)
maybe we can add it with joomla API rest but need many work ....

Hello

the closest we have to a REST API is using JSON output (frontend only)
by adding to the URLs:

&format=json

and for filtering you can use
&filter_28[1]=somevalue1
&filter_28[2]=somevalue2
&filter_48[]=somevalue3

note that you will need to configure filter DISPLAY:
e.g.
select drop down
select drop down range

if you use select drop then use:
&filter_28[]=somevalue0

if you use select drop range then use:
&filter_28[1]=somevalue1
&filter_28[2]=somevalue2

Note:
The above can be used in item and in category views
The fields that are readable depend on the access levels of current user
