I'm working on a catalog of products, once completed wonder if you can create user groups for each of these to publish their products from the front end.

Hello

1. Give to all your user group CREATE privelege, so that they can submit, (open component settings, go to permissions TAB)

2. In content type edit form you can select to disallow submiting some content types, e.g. disallow submtting content Type "Faq article"

3. You may want edit some (top-level) categories and deny create privelege on them (children will be disallowed too, due to heritage)

4. About your question, there are 2 priveleges: EDIT and EDIT OWNED, (open component settings, go to permissions TAB)
a. deny EDIT to all user groups
b. allow EDIT OWNED to all user groups
