Translate, category, tags, fields titles (not values), files with Joomfish. You can use the back-end direct translation module:

For items you have 2 options:
1. Use Joomfish to translate items, but this will translate only title and description fields. And all other fields will be common.
2. Duplicate (via Item Copy) e.g. 3 times every item for translation to 3 languages. This way you can translate the item fully, all field values. Then install and
enable this plugin to automatically display the proper translation accorded to the selected language:

Remember to set the SAME alias of the translated items of same content.
For both options, we use Joomfish language selection module to select language in the front-end.
For Solution 1 turn off category and tag language filtering. For solution 2 enable them
Warning: when using solution 2, if you have Joomfish items translations, delete or unpublish them, otherwise they will take precedence.
